Amazing Banana Zucchini Chocolate Orange Bread

Do you have brown bananas, frozen grated zucchini in your freezer, an extra orange left in the bowl on your counter? So do I so I decided to use up my leftover fruit and make it into the most delicious, moist bread with the addition of 2 kinds of chocolate to send it over the flavor edge I've been craving.

So do I so I decided to use up my leftover fruit and make it into the most delicious, moist bread with the addition of 2 kinds of chocolate to send it over the flavor edge I’ve been craving.

Banana Zucchini Chocolate Orange Bread

Preheat oven to 350°

In a large bowl sift these ingredients together:
3 cups flour
1 1/2 tsp. Baking powder
1 tsp. Baking soda
1 tsp. Salt
1/4 cup cocoa powder

In another large bowl mix together:
4 eggs
1 cup sugar
1 cup brown sugar
1/2 cup vegetable oil
4 mashed very ripe bananas
1 cup Grated zucchini dried with a towel
1 tsp. Vanilla
1 Tbl. Grated orange peel

After combining and mixing wet ingredients well, add 1/2 cup of the dry ingredients at a time carefully folding the dry mix into the wet mix. If you stir it too much the bread will be tough so carefully fold them together. Add 1 cup of chocolate chips into the batter. Spray 2 loaf pans evenly with cooking spray or coat with shortening. Divide the batter evenly between the 2 loaf pans. Tap the pans on the counter a few times to remove air bubbles. Place in 350° oven for 35-45 minutes or until a toothpick or knife inserted into the middle comes out clean. Remove from pans and cool on a wire rack. The flavor will intensify once the bread is cooled completely. Store at room temp. for up to 5 days or in fridge for up to 10 days.

For muffins:
Fill 24 muffin tins lined or unlined and greased 2/3 of the way full. Bake at 350° 12-14 minutes or until a toothpick inserted into the center comes out clean. Remove from tins and cool on wire racks.

Butter
Cream Cheese
Honey Butter
Cinnamon and Sugar
Preserves
Orange Marmalade
